Who are you and what’s your research about?
Mirai, a second-year Ph.D. student, earned her B.S. in Food Science and Technology from the University of California, Davis. She is currently working in Dr. Jin’s lab, enhancing specific properties of fermented foods through precision fermentation. She serves on the IFTSA (Institute of Food Technologists Student Association) Board of Directors as a Member-at-Large, determining the significance of events held by IFTSA. Her research goal is to provide delicious, sustainable, affordable, and safe products in the food industry. In her free time, Mirai enjoys cooking new recipes, traveling, hiking, and trying out new foods.
Why is the FSHN GSA important to you?
FSHN GSA serves as a community that helps me grow as an individual. This group provides me with the opportunity to work with other students, staff, and industry professionals, fostering connections in the food industry. My goal as a member of FSHN GSA is to create unity among other students, faculty, and our alumni to strengthen the UIUC FSHN department.
